Vegemite & Cheese Scrolls

Made with our butter puff pastry, these nostalgic, salty and buttery Vegemite and Cheese scrolls bake up golden and flaky perfect for lunchboxes. One batch on Sunday and you’re set for the week (if they last that long!)

Easy to make and perfect to prep ahead, they are a nourishing option for busy days, without unnecessary additives, and just as good warm as they are packed into lunchboxes.

Ingredients

  • 1 x 375g packet Carême All Butter Puff Pastry, thawed
  • 1–2 tablespoons Vegemite (to taste)
  • 1 cup grated cheddar cheese
  • 1 egg, lightly beaten (for egg wash)

Method

  1. Preheat the oven to 200°C fan-forced.
  2. Unroll the puff pastry, keeping it on the baking paper it comes wrapped in.
  3. Spread a thin, even layer of Vegemite over the pastry, going right to the edges. Sprinkle generously with grated cheddar.
  4. Starting from the long edge, roll the pastry into a firm log, keeping it tight as you go.
  5. Pop the rolled log into the freezer for 15 minutes. This quick chill makes for tidy, even slicing.
  6. Using a sharp knife, cut into 2–3cm thick rounds. Arrange the scrolls on a baking tray, lined with baking paper, leaving space between each one.
  7. Brush lightly with beaten egg.
  8. Bake for 20 minutes, or until golden and beautifully puffed.

Notes

Makes 18 scrolls. Cool slightly before serving. Delicious warm and melty or packed into lunchboxes for the week ahead.
