Upside Down Apple & Cinnamon Tart

Ingredients

  • 1 (375g packet) Carême All Butter Puff Pastry, defrosted
  • 1.5 tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • 2 to 3 Granny Smith Apples

Method

  1. Preheat oven to 200°C (220°C conventional).
  2. Line a baking sheet with baking paper. Cut a 22cm circle of puff pastry and set aside.
  3. Combine the sugar and cinnamon in a bowl. Draw a 20cm circle on the baking paper and sprinkle the sugar directly on the baking paper staying within the circle.
  4. Remove the core from the apples and cut 5mm thick slices, place these on top of the sugar in a concentric pattern. Please the circle of puff pastry on top of the apple.
  5. Bake for 20 minutes. Remove from oven and leave to cool for 10 minutes before inverting on to a plate and gently peel back the baking paper. Dust with icing sugar and serve with cream or ice cream.
