Savoury Puff Pastry Christmas Tree

There’s no better way to start a Christmas gathering by serving up some true Christmas spirit. This show-stopping savoury Christmas tree combines basil pesto, parmesan and fire-roasted capsicum inside a buttery, flaky puff pastry case that not only looks stunning, but tastes amazing as well!

Ingredients

  • 2 x (375g packet) Carême All Butter Puff Pastry, defrosted
  • 1/3 cup basil pesto
  • 1/2 cup finely grated parmesan
  • 60g fire roasted capsicum strips, finely chopped
  • 1 egg yolk
  • 1 tbsp milk

Method

  1. Preheat oven to 190°C (170°C fan forced)and line a baking tray with baking paper or a baking mat.
  2. Mix together the pesto, parmesan and capsicum in a bowl.
  3. Unroll one sheet of pastry and place on the baking tray. Spread the pesto and parmesan
  4. all over the pastry. Unroll the second sheet of pastry and place on top. Press gently to seal the two pastry sheets together.
  5. Cut out the pastry in the shape of a Christmas tree (keep the extra pieces for later).Transfer to the fridge or freezer for 30 minutes to make the pastry easier to cut and to prevent shrinkage.
  6. Using a sharp knife, cut slits on both sides of the tree spacing them about 2 cm apart, leaving the center intact. Twist each strip of pastry 2 or 3 times, pressing the ends into the baking sheet. Repeat with the puff pastry leftovers and place on a separate lined baking tray.
  7. Brush pastry with a mixture of egg yolk and milk and bake for 25-30 minutes until golden. Allow to cool for 5 minutes and serve as a pull-apart appetizer!
