Fig & Brie Tart

This fig and brie tart is an easy savoury tart recipe that pairs sweet figs with creamy cheese on our golden puff pastry. A simple way to bring together quality ingredients, whose flavours shine.

Ingredients

  • 1 x 375g packet Carême All Butter Puff Pastry, defrosted
  • 4 or 6 ripe (but not too ripe) figs, sliced into wedges
  • 200g wheel brie, sliced (extra for snacking)
  • 3 tbsp Almond or Hazelnut meal
  • 1 egg, beaten
  • Drizzle of olive oil
  • Salt & pepper
  • 2 Tbsp Singing Magpie Sticky Quince Syrup
  • Fresh herbs to finish (thyme, basil or mint all work)

Method

  1. Preheat oven to 200°C fan-forced.
  2. Unroll your puff pastry (on its baking paper) onto a tray. Score a 3cm border, careful not to cut through.
  3. Scatter almond meal evenly inside the border (this will soak up the fig juices as it bakes).
  4. Layer figs and brie in rows across the tart, slightly overlapping.
  5. Drizzle with olive oil and season lightly with salt and pepper.
  6. Brush the border with egg wash.
  7. Bake for 25–30 minutes, until the pastry is golden and perfectly puffed and the brie is melted.
  8. Finish with fresh herbs. Serve warm or at room temperature. Eat, enjoy.
