Easy Beef, Ricotta & Parmesan Sausage Rolls
These beef, ricotta and parmesan sausage rolls are an easy sausage roll recipe made with puff pastry and nourishing filling. A simple option for feeding hungry mouths, whether for dinner, lunchboxes, or something to have on hand for the endless school holiday snacks.

Ingredients
- 450g beef mince
- 90g fresh ricotta
- 50g breadcrumbs
- 60g finely grated parmesan
- 1 tbsp bone broth concentrate (we love The Stock Merchant Range) link here
- 2 tsp onion powder
- 1 tsp garlic powder
- Salt & Pepper
- 1 egg, lightly beaten
- 375g Spelt Wholemeal Butter puff pastry, thawed
- 1 egg + splash of milk for brushing
- 1 tbsp black sesame seeds
Method
- In a large bowl, combine ricotta, breadcrumbs, parmesan, bone broth concentrate, onion powder, garlic powder, salt and pepper. Add beef mince and egg. Mix gently until just combined.
- Cut pastry sheet in half lengthways. Divide filling evenly between the two pieces, spooning along the centre of each. Roll pastry over filling, then crimp edges together and seal with a fork to create a small lip.
- Brush with egg wash, cut each roll into your preferred size (e.g. 4 medium or 6 small) and sprinkle on black sesame seeds.
- Bake at 200°C (fan 180°C) for 25–30 minutes, until golden.
