Anchovy & Parmesan Puff Pastry Twists

These anchovy and parmesan puff pastry twists are an easy savoury puff pastry recipe, packed with bold flavour and crisp texture. Ready in half an hour, they are perfect for a quick snack or something simple to share when entertaining.

Ingredients

  • 1 × 375g pack Carême All Butter Puff Pastry, defrosted
  • 2 × 48g tins anchovies in extra virgin olive oil
  • 80g parmesan, finely grated
  • 1 egg, beaten
  • Black sesame seeds, optional

Method

  1. Preheat oven to 200°C fan-forced. Line a large baking tray with baking paper.
  2. Unroll the sheet of puff pastry onto a lightly floured surface and lightly dust the top with flour. Fold the sheet in half lengthways, press gently to crease, then unfold and cut along the crease to create two long rectangles.
  3. Brush one rectangle of pastry with beaten egg. Lay anchovies lengthways across the pastry, spacing them roughly 1cm to 2cm apart, creating even rows from top to bottom. Top with a generous grating of parmesan.
  4. Place the second pastry rectangle on top to enclose the filling. Use a rolling pin to gently roll over the surface to help the sheets adhere (don’t press too firmly or the filling may tear through).
  5. Using a sharp knife, cut between each row of anchovies to create even strips. Pick up a strip and twist it several times, holding each end as you turn. Place onto the prepared baking tray. Repeat with remaining strips.
  6. Brush the tops with beaten egg and sprinkle with black sesame seeds if using.
  7. Bake for 20–25 minutes, or until the twists are puffed and deep golden.
