Salmon, Prawn & Tarragon Pie

A subtle hint of tarragon complements the seafood, and a creamy sauce, topped with flaky, buttery puff pastry, elevates these individual salmon and prawn pies to a whole new level.

Cherry Frangipane Wreath Tart

A beautiful cherry tart with a sweet almond frangipane filling, decorated with pastry leaves to resemble a Christmas wreath. Best made on the day it’s served, this tart can be eaten cold for afternoon tea or warm as a dessert.

Turkish Delight Jelly & Panna Cotta Tart

In this recipe, we have combined the sweet rose flavours of the Middle Eastern confection, Turkish delight, with the silky creamy texture of an Italian panna cotta to make this tart the perfect centerpiece for your Christmas table.

The tart and panna cotta can be prepared the day before. Prepare the jelly at least 4 hours before serving.

Cheesy Turkey & Spinach Strudel

Make the most of your Christmas leftover turkey by making this delicious and easy strudel. This recipe can be used anytime of the year, replace the turkey with diced cooked chicken breast or omit the meat and add your favourite vegetables for a simple meat-free meal.

Crab & Celeriac Remoulade Tartlets

Sweet flaked crab mixed with grated celeriac, herbs, lemon and mayonnaise makes the perfect filling for these mini tartlets to serve as a canapé or entree during the festive season. Make the pastry cases and filling ahead of time and fill just before serving.

Whipped Goats Cheese, Pea & Hot Smoked Salmon Tart

The salty and tart flavours of the goat’s cheese marry perfectly with the smokiness of the salmon and sweetness from the peas in this tart. Serve it with mixed salad leaves dressed with a lemon vinaigrette to make it the perfect summer or Christmas lunch for those who prefer a cold seafood dish over a hot roast lunch.

Fig & Pecan Fruit Mince Tarts

With buttery, flaky pastry cases and a decadent filling of rum soaked dried fruits and pecans, these fruit mince tarts are perfect for a Christmas treat or to give away as a gift. Make the fruit mince at least two days ahead, but even longer (up to a month), if possible. The longer the fruit soaks, the more intense the flavours will be.
