Ottolenghi’s Caramelised Garlic Tart…

We want to introduce you to what we think is the best quiche recipe of all time, the Caramelized Garlic Tart; big call we know but once you bake this we think you will agree. We have baked this many, many times for guests visiting Carême and it never fails to please.  We would love to say we created this recipe but no, that honour goes to the brilliant Yotam Ottolenghi.

Over the last couple of years we have fallen in love with the food from the cookbooks and creators of Ottolenghi in London. The best known of course being ‘Plenty’ and now ‘Plenty More’. I can honestly say these books have had the most profound impact on the way we cook at home, the recipes of Yotam Ottolenghi are truly inspired, and made us realize how much we underestimated the role of vegetables on our plate. We now have more vegetables in our diet than ever before, our pantry is packed with a range of vinegar’s (I have a new found love and respect for this pantry staple) and tahini and natural yoghurt are a must. So if I had to name a cookbook or author that has changed the way I cook it would have to be Yotam Ottolenghi.
